During World War I the Caulfield mansion Glen Eira was converted into Caulfield Military Hospital. After the war it contined as a a repatriation hospital and permanent home for many disabled soldiers. It was described by author George Johnston in My Brother Jack - his mother worked at the hospital.
The menu includes a fish dish translating as whiting fillets in sauce marguery - a classic hollandaise flavoured with fish essence and oyster puree.

Physical Description
Card with rounded edges, folded at centre to create four sides. Front of card features diagonal brown colour stripe at top left corner and printed text in blue ink. Inside faces of the card feature a toast list and menu list printed in blue ink, with each of the two headings accompanied by a small illustration and surrounded by a decorative border.
